Brownies are an all time favourite sweet treat, especially when they’re soft and fudgy in the middle. Quick and easy to make, this recipe is one for the chocolate lovers out there; they’re impossible to resist!
Ingredients (makes 9 brownies):
100g unsalted butter
75g dark brown (muscovado) sugar
175g caster sugar
125g dark chocolate
1 tbsp golden syrup
2 eggs
1 tsp vanilla extract
100g plain flour
2 tbsp cocoa powder (I use Green & Blacks)
½ tsp baking powder
Instructions:
- Pre-heat your oven to 180°C.
- Grease and line a square 8 inch baking tin.
- Melt the butter in a pan and add both sugars, the dark chocolate (broken into small squares) and the syrup. Stir until the mixture is smooth and leave to cool.
- Beat together the eggs and vanilla extract and slowly pour into the cooled chocolate mixture, while stirring.
- In a separate bowl, sieve together the flour, baking powder and cocoa powder.
- Pour the chocolate mixture into the bowl and fold until smooth.
- Pour the combined mixture into your lined cake tin, ensuring it is evenly spread and reaches all edges.
- Place into your pre-heated oven and bake for 25 minutes until the top of the brownie is crisp.
- Leave to cool before cutting into squares and removing from the tin.
