Quick & Easy Orange Biscuits - The Project Lifestyle

I made these biscuits for an afternoon tea at a Hen Do. They are quick and easy to make, taste delicious and go perfectly with a cup of tea. I chose to use teapot and teacup cutters for my biscuits, but you can make them in any shape or size.

Ingredients:

250g unsalted butter (softened)
250g caster sugar
Finely grated zest of 2 oranges
1 large egg
500g plain flour

Method:

  1. Pre-heat the oven to 175° C and line 2 baking trays with greaseproof paper.
  2. Place the butter, sugar and orange zest in a bowl and cream together.
  3. Whilst whisking, add the beaten egg into the mixture.
  4. Sift in the flour bit by bit and mix with a wooden spoon until the dough comes together.
  5. Bring the dough into a ball and leave in the fridge for 30 minutes to chill.
  6. Dust the worktop with flour and use a rolling pin to roll out the dough to approximately 5mm thickness.
  7. Use your selection of cookie cutters to cut out shapes and place straight onto the lined baking tray.
  8. Bake in the oven for 6 minutes until the biscuits are golden brown around the edges.
  9. Remove from the oven and let the biscuits rest for 30 minutes.
  10. Enjoy with a nice cup of tea!
